Program Description:

The Global Nutrition Translation has resulted in a marked increase internationally in the intake of vegetable oils, rich in short chain omega-6 fatty acids. Supplementation with long-chain fatty acids from fish and plant sources may help reduce the risk of obesity, many age-related chronic disease and support immune function. Modern biotechnology has made supplementation with lipids an important but underutilized component of dietary modification. There will be no mention of any specific products in the symposium and both fish and plant lipid sources will be discussed and contrasted rather than solely concentrating on any single source of long chain omega-3.

Learning Objectives:

  1. Describe the role of DHA and EPA in immune function.
  2. Describe the role of long-chain fatty acids in human health and brain functioning.
  3. Describe the role of lipid supplementation in the global epidemic of obesity.
